Third annual Memorial Day survival camp at The Land of Odd in Iroquois County IL.
An out of the frying pan and into the fire experience. Everything we eat for the entire weekend will have either been foraged, grown, hunted, or caught in the local area. Chef Shane Graybeal (Bin 36, Sable, Bandit) will be on site to prepare all meals and give insight and advice on preparing and preserving foraged ingredients as well as cooking demos.
In addition to foraging and campfire camaraderie other activities will include fishing, nighttime headlamp frog walk, haunted site exploration, finding and identifying local fauna (reptiles, insects, and more), viewing the local bison herd, exploring ruins, maybe a trip to a nearby waterfall, and more. A weekend of experiences to last a lifetime.

Chef Shane Graybeal has been cooking 25 years in top kitchens in Charleston SC, Richmond Va, Washington DC and Chicago. His style is modern American with an emphasis on seasonality and local ingredients. Most recently he was the executive chef at the Royal Grocer and Company in Chicago’s Bucktown neighborhood. He has had stints at The Bandit in the west loop, Bin 36, and Sable where he received a recommendation from the Michelin guide. He is excited to be working with his long time friend Dave Odd.
